  • 1/8 teaspoon baking soda
  • Pinch of salt
  • 30 g chopped dark chocolate or chocolate chips

Instructions

  1. In a mixing bowl, cream the room temperature butter with both the brown and granulated sugars until light and fluffy.
  2. Incorporate the double cream and vanilla extract, stirring until well-combined.
  3. Gradually add the flour, baking soda, and a pinch of salt, mixing until a cohesive dough forms.
  4. Gently fold in the dark chocolate chunks or chocolate chips.
  5. Chill the dough in the refrigerator for at least 30 minutes.
  6. Preheat your oven to 180°C (350°F) and line a baking tray with parchment paper.
  7. Scoop or roll the chilled dough into a ball and place it onto the prepared tray, pressing a few extra chocolate pieces on top.
  8. Bake for 15-18 minutes until the edges are set and the center remains soft.
  9. Let the cookie cool on the tray for 10-15 minutes before enjoying.
