Slow Cooker Beef Stew: How to Get 1 Perfect Pot

Description

Hearty, comforting, and easy Slow Cooker Beef Stew made with tender beef, hearty vegetables, and rich, savory broth — the ultimate cozy meal for busy days.


Ingredients

23 lbs beef chuck roast, cut into 1-inch cubes

Salt and freshly ground black pepper

1 large onion, chopped

3 carrots, peeled and chopped into 1-inch pieces

3 celery stalks, chopped into 1-inch pieces

1.5 lbs small red or Yukon gold potatoes, quartered

1 cup frozen peas

2 cups beef broth (low sodium)

1 (14.5 oz) can diced tomatoes, undrained

½ cup beef broth + 1 tablespoon balsamic vinegar

2 tablespoons tomato paste

2 bay leaves

1 teaspoon dried thyme

1 teaspoon dried rosemary, crushed

1 tablespoon Worcestershire sauce

2 cloves garlic, minced

2 tablespoons cornstarch mixed with 2 tablespoons cold water (optional)


Instructions

1. Pat beef dry and season generously with salt and pepper.

2. (Optional) Brown beef in batches in a skillet with olive oil for added flavor.

3. Layer onions, carrots, celery, and potatoes in the bottom of the slow cooker.

4. Add beef cubes on top of vegetables.

5. In a bowl, whisk together beef broth, diced tomatoes,  beef broth, balsamic vinegar , tomato paste, Worcestershire sauce, minced garlic, bay leaves, thyme, and rosemary.

6. Pour liquid mixture over beef and vegetables.

7. Cover and cook on LOW for 7-8 hours or HIGH for 3-4 hours until beef is fork-tender.

8. Stir in frozen peas about 30 minutes before serving.

9. (Optional) Add cornstarch slurry, cover, and cook another 15-30 minutes to thicken.

10. Remove bay leaves, adjust seasoning, and serve hot.

Notes

Add mushrooms during the last hour for earthy depth.

For a spicy kick, add red pepper flakes or hot sauce.

Try parsnips or sweet potatoes for variety.

Garnish with fresh parsley or chives before serving.

Serve with crusty bread or in a bread bowl for extra comfort.
