Description

A hearty and warming slow cooker chicken stew filled with tender chicken, fresh vegetables, and savory broth, perfect for busy days or cold evenings.


Ingredients

  • 2 pounds boneless, skinless chicken thighs or breasts
  • 3 carrots, diced
  • 3 celery stalks, diced
  • 1 onion, diced
  • 4 medium potatoes, peeled and cubed
  • 4 cloves garlic, minced
  • 4 cups low-sodium chicken broth
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 2 bay leaves
  • Salt and pepper, to taste
  • 1/4 cup all-purpose flour (optional, for thickening)
  • Fresh parsley, chopped (for garnish, optional)

Instructions

  1. Heat a skillet on medium-high heat and add a little oil. Sear the chicken until golden brown on both sides, about 4-5 minutes.
  2. Transfer the chicken to the slow cooker. Add carrots, celery, onion, potatoes, garlic, and bay leaves.
  3. Season with thyme, salt, and pepper, and stir to combine.
  4. Pour in the chicken broth. If thickening, make a slurry with flour and a bit of broth, then add it; otherwise, skip the flour.
  5. Cover and cook on low for 6–8 hours or high for 3–4 hours until chicken and vegetables are tender.
  6. Remove bay leaves, taste, and adjust seasoning. Serve in bowls, garnished with parsley if desired.

Notes

For thicker stew, mix extra flour with broth to create a slurry. Add extra vegetables like peas or corn in the last hour of cooking.
