- 2 pounds boneless, skinless chicken thighs or breasts
- 3 carrots, diced
- 3 celery stalks, diced
- 1 onion, diced
- 4 medium potatoes, peeled and cubed
- 4 cloves garlic, minced
- 4 cups low-sodium chicken broth
- 2 tablespoons tomato paste
- 1 teaspoon dried thyme
- 2 bay leaves
- Salt and pepper, to taste
- 1/4 cup all-purpose flour (optional, for thickening)
- Fresh parsley, chopped (for garnish, optional)
Instructions
- Heat a skillet on medium-high heat and add a little oil. Sear the chicken until golden brown on both sides, about 4-5 minutes.
- Transfer the chicken to the slow cooker. Add carrots, celery, onion, potatoes, garlic, and bay leaves.
- Season with thyme, salt, and pepper, and stir to combine.
- Pour in the chicken broth. If thickening, make a slurry with flour and a bit of broth, then add it; otherwise, skip the flour.
- Cover and cook on low for 6–8 hours or high for 3–4 hours until chicken and vegetables are tender.
- Remove bay leaves, taste, and adjust seasoning. Serve in bowls, garnished with parsley if desired.
Notes
For thicker stew, mix extra flour with broth to create a slurry. Add extra vegetables like peas or corn in the last hour of cooking.
