Description

A hearty and filling casserole featuring ground beef, beans, tater tots, and cheese, cooked conveniently in a slow cooker.


Ingredients

  • 1 lb ground beef
  • 1 can corn, drained
  • 1 can black beans, drained and rinsed
  • 1 can diced tomatoes with green chiles, undrained
  • 1 onion, chopped
  • 2 cups frozen tater tots
  • 1 cup shredded cheddar cheese
  • 1 packet taco seasoning
  • Salt and pepper to taste

Instructions

  1. In a skillet, brown the ground beef with the chopped onion until fully cooked. Drain excess fat.
  2. Transfer the beef mixture to the slow cooker. Add the corn, black beans, diced tomatoes, taco seasoning, salt, and pepper. Stir to combine.
  3. Top the mixture with frozen tater tots and sprinkle cheddar cheese on top.
  4. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  5. Serve warm and enjoy!

Notes

Serve with sour cream or chopped green onions for added flavor. Pair with a simple salad or crusty bread.
