A hearty and filling casserole featuring ground beef, beans, tater tots, and cheese, cooked conveniently in a slow cooker.
Ingredients

- 1 lb ground beef
- 1 can corn, drained
- 1 can black beans, drained and rinsed
- 1 can diced tomatoes with green chiles, undrained
- 1 onion, chopped
- 2 cups frozen tater tots
- 1 cup shredded cheddar cheese
- 1 packet taco seasoning
- Salt and pepper to taste
Instructions
- In a skillet, brown the ground beef with the chopped onion until fully cooked. Drain excess fat.
- Transfer the beef mixture to the slow cooker. Add the corn, black beans, diced tomatoes, taco seasoning, salt, and pepper. Stir to combine.
- Top the mixture with frozen tater tots and sprinkle cheddar cheese on top.
- Cover and cook on low for 6-8 hours or high for 3-4 hours.
- Serve warm and enjoy!
Notes
Serve with sour cream or chopped green onions for added flavor. Pair with a simple salad or crusty bread.
