Tender slow-cooked chicken simmered with lemon, garlic, and herbs in a bright savory sauce, perfect for an easy flavorful dinner.
Ingredients
2–3 lbs bone-in, skin-on chicken thighs or breasts
2–3 lemons (zest and juice)
6–8 garlic cloves, minced
1 cup low sodium chicken broth
2 tbsp olive oil
1 tsp dried oregano
1 tsp dried thyme
Salt and pepper, to taste
Optional: fresh parsley or dill for garnish
Optional: pinch of red pepper flakes
Instructions
1. Pat chicken dry with paper towels; season with salt and pepper.
2. (Optional) Sear chicken in olive oil for 2-3 minutes per side until lightly browned.
3. Place half of the garlic and lemon slices at the bottom of the slow cooker.
4. Arrange chicken pieces on top.
5. Sprinkle remaining garlic over chicken; zest and juice lemons over the top.
6. Add oregano, thyme, and pour chicken broth around the chicken.
7. Cover and cook on LOW 3-4 hours or HIGH 2-3 hours until chicken reaches 165°F and is tender.
8. Remove chicken carefully; garnish with parsley or dill and serve with extra lemon wedges.
Notes
Add red pepper flakes or smoked paprika for spice.
Tuck in fresh rosemary, thyme, or tarragon for extra herb flavor.
Add carrots, potatoes, or artichoke hearts during the last hour for a one-pot meal.
Mushrooms cook beautifully with the sauce.
