Ingredients

Ground Beef (80/20 or 85/15 recommended for best flavor and texture)

Breadcrumbs (Panko or regular)

Egg

Onion (finely minced)

Garlic Powder

Onion Powder

Salt & Black Pepper

Cream of Mushroom Soup (or Cream of Celery for a different twist)

Beef Broth

Worcestershire Sauce

Ketchup (a surprising but essential ingredient for depth!)

Dijon Mustard (for a subtle tang)

Brown Gravy Mix (optional, for extra thickness and flavor)

Fresh Mushrooms (sliced, if desired)


Instructions

1. In a large bowl, gently combine ground beef, breadcrumbs, egg, minced onion, garlic powder, onion powder, salt, and pepper. Avoid overmixing.

2. Roll mixture into uniform 1.5 to 2-inch meatballs (about 20-24).

3. (Optional) In a skillet over medium-high heat, sear meatballs in olive oil until browned on all sides. Transfer to slow cooker.

4. In a bowl or skillet, whisk together cream of mushroom soup, beef broth, Worcestershire sauce, ketchup, Dijon mustard, and brown gravy mix (if using). Add mushrooms if desired.

5. Pour gravy mixture over meatballs in slow cooker, ensuring all are coated.

6. Cook on LOW 6-8 hours or HIGH 3-4 hours until meatballs are tender and cooked through.

7. (Optional) If gravy is thin, stir in a cornstarch slurry (1 tbsp cornstarch + 2 tbsp cold water) during the last 30 minutes.

Notes

Serve with mashed potatoes, egg noodles, or rice.
