Description

A unique and flavorful dish that combines the rich, smoky flavor of Gouda cheese with sweet, earthy cabbage.

Ingredients

Scale
  • 3 cups Cabbage (finely shredded)
  • 1/2 cup Smoked Gouda (or Havarti or Parmesan cheese, shredded)
  • 1 Tbs Fresh Dill (minced)
  • 2 tsp Fresh Thyme (chopped)
  • 1 tsp Sea Salt
  • 6 TBS Milk
  • 1/4 cup Sour Cream
  • 2 Eggs
  • 1/2 cup Flour (all purpose, Einkorn, whole wheat or a combination)
  • 1/4 tsp Baking Powder
  • 1/8 tsp Baking Soda
  • 1/4 tsp Sea Salt

Instructions

  1. Preheat your oven to 400°F (200°C). Lightly butter an 8″ cast-iron skillet and set it aside.
  2. Combine cabbage, smoked Gouda, dill, thyme, and salt in a medium bowl. Mix well and add to the prepared skillet.
  3. In a small bowl, whisk together milk, sour cream, and eggs. Stir in flour, baking powder, baking soda, and salt until well combined.
  4. Pour the crust mixture over the cabbage mixture in the skillet. Use a fork to lift the cabbage slightly for even distribution.
  5. Bake for about 30 minutes, or until the center is set and the top is golden brown.
  6. Garnish with fresh dill and thyme before serving.

Notes

Pairs well with salad or crusty bread. Can be stored in the refrigerator for up to 3 days.
