A unique and flavorful dish that combines the rich, smoky flavor of Gouda cheese with sweet, earthy cabbage.

- 3 cups Cabbage (finely shredded)
- 1/2 cup Smoked Gouda (or Havarti or Parmesan cheese, shredded)
- 1 Tbs Fresh Dill (minced)
- 2 tsp Fresh Thyme (chopped)
- 1 tsp Sea Salt
- 6 TBS Milk
- 1/4 cup Sour Cream
- 2 Eggs
- 1/2 cup Flour (all purpose, Einkorn, whole wheat or a combination)
- 1/4 tsp Baking Powder
- 1/8 tsp Baking Soda
- 1/4 tsp Sea Salt
Instructions
- Preheat your oven to 400°F (200°C). Lightly butter an 8″ cast-iron skillet and set it aside.
- Combine cabbage, smoked Gouda, dill, thyme, and salt in a medium bowl. Mix well and add to the prepared skillet.
- In a small bowl, whisk together milk, sour cream, and eggs. Stir in flour, baking powder, baking soda, and salt until well combined.
- Pour the crust mixture over the cabbage mixture in the skillet. Use a fork to lift the cabbage slightly for even distribution.
- Bake for about 30 minutes, or until the center is set and the top is golden brown.
- Garnish with fresh dill and thyme before serving.
Notes
Pairs well with salad or crusty bread. Can be stored in the refrigerator for up to 3 days.
