Delightful cookies inspired by the classic campfire treat, combining chocolate, marshmallows, and graham crackers for a gooey, chocolatey experience.

- 1 cup unsalted butter (room temperature)
- 1 cup dark brown sugar
- 1/2 cup white sugar
- 2 eggs (room temperature)
- 1 teaspoon vanilla extract
- 3 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon kosher salt
- 1/2 cup semisweet chocolate chips
- 1/2 cup bittersweet chocolate chips (or chunks)
- 4 graham crackers (broken in half)
- 2 Hershey’s chocolate bars (or other chocolate of your choice)
- 8 large marshmallows
Instructions
- Preheat the oven to 350°F.
- Cream together the unsalted butter, dark brown sugar, and white sugar in a large mixing bowl using a hand mixer or stand mixer until smooth.
- Incorporate the eggs and vanilla extract, continuing to mix until everything is combined.
- In a separate bowl, whisk together the all-purpose flour, baking soda, and kosher salt.
- Gradually add the dry ingredients to the wet mixture, mixing until there are no dry streaks.
- Fold in the semisweet and bittersweet chocolate chips for that rich chocolate flavor.
- Chill the dough in the refrigerator for about 30 minutes.
- Line a baking sheet with parchment paper and place the broken graham crackers on it.
- Layer 2 chocolate pieces on each graham cracker and top with a marshmallow.
- Scoop out the dough and cover the s’more mounds with it, pressing down slightly to encase everything.
- Bake for 12–15 minutes, until they’re golden brown.
Notes
For added flavor, consider using flavored marshmallows or mixing in some chopped nuts.
