S’mores Cookies

Description

Delightful cookies inspired by the classic campfire treat, combining chocolate, marshmallows, and graham crackers for a gooey, chocolatey experience.


Ingredients

  • 1 cup unsalted butter (room temperature)
  • 1 cup dark brown sugar
  • 1/2 cup white sugar
  • 2 eggs (room temperature)
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon kosher salt
  • 1/2 cup semisweet chocolate chips
  • 1/2 cup bittersweet chocolate chips (or chunks)
  • 4 graham crackers (broken in half)
  • 2 Hershey’s chocolate bars (or other chocolate of your choice)
  • 8 large marshmallows

Instructions

  1. Preheat the oven to 350°F.
  2. Cream together the unsalted butter, dark brown sugar, and white sugar in a large mixing bowl using a hand mixer or stand mixer until smooth.
  3. Incorporate the eggs and vanilla extract, continuing to mix until everything is combined.
  4. In a separate bowl, whisk together the all-purpose flour, baking soda, and kosher salt.
  5. Gradually add the dry ingredients to the wet mixture, mixing until there are no dry streaks.
  6. Fold in the semisweet and bittersweet chocolate chips for that rich chocolate flavor.
  7. Chill the dough in the refrigerator for about 30 minutes.
  8. Line a baking sheet with parchment paper and place the broken graham crackers on it.
  9. Layer 2 chocolate pieces on each graham cracker and top with a marshmallow.
  10. Scoop out the dough and cover the s’more mounds with it, pressing down slightly to encase everything.
  11. Bake for 12–15 minutes, until they’re golden brown.

Notes

For added flavor, consider using flavored marshmallows or mixing in some chopped nuts.
