Soft, chewy snickerdoodle cookies with a warm cinnamon flavor, perfect for any occasion.

- 2 3/4 cups all-purpose flour
- 2 tsp cream of tartar
- 1 tsp baking soda
- 1/2 tsp salt
- 3/4 cup unsalted butter, room temperature
- 1 1/2 cups sugar, plus 3 tbsp for rolling
- 2 large eggs
- 1 1/2 tsp vanilla extract
- 1 tbsp ground cinnamon
Instructions
- Preheat the oven to 400°F.
- Lightly grease a cookie sheet or line it with parchment paper.
- In a medium bowl, combine the flour, cream of tartar, baking soda, and salt. Set aside.
- In a large bowl, cream together the softened butter and 1 1/2 cups sugar until fluffy.
- Beat in the eggs one at a time and stir in the vanilla extract.
- Gradually add the dry ingredients until just combined.
- In a small bowl, mix the remaining sugar with the cinnamon.
- Roll the dough into tablespoon-sized balls and coat in the cinnamon sugar mixture.
- Place on the cookie sheet, spaced about 2 inches apart.
- Bake for 6-8 minutes until edges are golden and centers are soft.
- Let cool on the sheet for a few minutes before transferring to a cooling rack.
Notes
For thicker cookies, chill the dough for 30 minutes before rolling into balls.
