Description

Deliciously soft and chewy lemon cookies that are perfect for any occasion, filled with bright and refreshing flavors.


Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup powdered sugar
  • 2 large eggs
  • 2 tablespoons lemon juice
  • 1 tablespoon lemon zest
  • 2 teaspoons vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, cream together the softened butter, granulated sugar, and powdered sugar until light and fluffy, about 3-5 minutes.
  3. Add the eggs one at a time, mixing well after each addition, then stir in lemon juice, lemon zest, and vanilla extract.
  4. In another bowl, whisk together the flour, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  6. Line a baking sheet with parchment paper.
  7. Drop rounded tablespoonfuls of dough onto the lined baking sheet, leaving space between each cookie.
  8. Bake for 10-12 minutes or until the edges are lightly golden and the centers are soft.
  9. Allow cookies to cool on the baking sheet for 5 minutes, then transfer to wire racks to cool completely.
