Ingredients

  • ½ teaspoon almond extract (optional)
  • 3 cups powdered sugar, sifted
  • 34 tablespoons milk
  • 2 tablespoons light corn syrup
  • ½ teaspoon vanilla extract (for the icing)
  • Gel food coloring (optional for decorating)

Instructions

  1. In a large bowl, whisk together the all-purpose flour, baking powder, and salt. Set aside.
  2. Cream together the softened butter and granulated sugar until light and fluffy.
  3. Beat in the eggs one at a time, followed by the vanilla and almond extracts.
  4. Gradually add the flour mixture to the butter mixture, folding until a soft dough forms.
  5. Divide the dough, roll out each portion to ¼ inch thickness on a floured surface.
  6. Chill the rolled dough on a baking sheet for 1-2 hours.
  7. Preheat oven to 375°F (190°C) and line baking sheets with parchment.
  8. Cut out cookie shapes and place them on the prepared baking sheets.
  9. Bake for 8-10 minutes, or until lightly browned around the edges.
  10. Let sit on baking sheets for 5 minutes before transferring to a wire rack to cool completely.
  11. Prepare icing by mixing powdered sugar, milk, light corn syrup, and vanilla extract until smooth; then add food coloring if desired.
  12. Decorate the cooled cookies with icing as desired.
