- 1/2 cup unsalted butter, softened
- 1/2 cup brown sugar, packed
- 1/2 cup granulated sugar
- 1 large egg
- 1/2 cup molasses
Instructions
- Preheat your oven to 350°F (175°C) and line your baking sheets with parchment paper.
- In a large bowl, whisk together the flour, baking soda, ginger, cinnamon, nutmeg, cloves, and salt.
- In another bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy (about 2-3 minutes).
- Beat in the egg and molasses until well combined.
- Gradually add the flour mixture to the wet ingredients, mixing just until combined.
- Scoop cookie dough onto prepared baking sheets, giving enough space for spreading.
- Bake for 8-10 minutes, until edges are set but centers remain soft.
- Let cookies cool on baking sheets for a few minutes before transferring to wire racks to cool completely.
Notes
Serve with hot cocoa or tea, consider icing or powdered sugar for decoration.
