Ingredients

  • 1/2 teaspoon ground nutmeg

  • 1/2 cup unsalted butter, softened
  • 1/2 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1/2 cup molasses

Instructions

  1. Preheat your oven to 350°F (175°C) and line your baking sheets with parchment paper.
  2. In a large bowl, whisk together the flour, baking soda, ginger, cinnamon, nutmeg, cloves, and salt.
  3. In another bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy (about 2-3 minutes).
  4. Beat in the egg and molasses until well combined.
  5. Gradually add the flour mixture to the wet ingredients, mixing just until combined.
  6. Scoop cookie dough onto prepared baking sheets, giving enough space for spreading.
  7. Bake for 8-10 minutes, until edges are set but centers remain soft.
  8. Let cookies cool on baking sheets for a few minutes before transferring to wire racks to cool completely.

Notes

Serve with hot cocoa or tea, consider icing or powdered sugar for decoration.
