Ingredients

  • 1 1/2 cups granulated sugar
  • 1 cup pumpkin puree (not pumpkin pie filling)
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 8 ounces cream cheese, softened
  • 1/2 cup (1 stick) unsalted butter, softened (for frosting)
  • 4 cups powdered sugar
  • 2 teaspoons vanilla extract (for frosting)
  • 24 tablespoons milk (or heavy cream), for desired frosting consistency

Instructions

  1. In a medium bowl, whisk together the flour, baking soda, cinnamon, nutmeg, cloves, and salt.
  2. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy, about 3 to 5 minutes.
  3. Beat in the pumpkin puree until well combined, then add egg and vanilla extract.
  4. Gradually add the dry ingredients to the wet mixture; mix on low speed until just combined.
  5. Chill the dough in the refrigerator for at least 1 hour.
  6. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  7. Scoop rounded tablespoons of dough onto the prepared sheets, leaving space between each.
  8. Bake for 10 to 12 minutes, until edges are lightly golden brown and centers are set.
  9. Cool the cookies on a wire rack.
  10. For frosting, cream together the softened cream cheese and butter until smooth, then gradually add powdered sugar and mix in vanilla and milk until desired consistency.
  11. Frost fully cooled cookies and decorate if desired.

Notes

Store in an airtight container for up to 3 days. For longer storage, freeze unfrosted cookies.
