- 1 teaspoon baking soda

- 1 1/2 cups granulated sugar
- 1 cup pumpkin puree (not pumpkin pie filling)
- 1 large egg
- 1 teaspoon vanilla extract
- 8 ounces cream cheese, softened
- 1/2 cup (1 stick) unsalted butter, softened (for frosting)
- 4 cups powdered sugar
- 2 teaspoons vanilla extract (for frosting)
- 2–4 tablespoons milk (or heavy cream), for desired frosting consistency
Instructions
- In a medium bowl, whisk together the flour, baking soda, cinnamon, nutmeg, cloves, and salt.
- In a large bowl, cream together the softened butter and granulated sugar until light and fluffy, about 3 to 5 minutes.
- Beat in the pumpkin puree until well combined, then add egg and vanilla extract.
- Gradually add the dry ingredients to the wet mixture; mix on low speed until just combined.
- Chill the dough in the refrigerator for at least 1 hour.
- Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
- Scoop rounded tablespoons of dough onto the prepared sheets, leaving space between each.
- Bake for 10 to 12 minutes, until edges are lightly golden brown and centers are set.
- Cool the cookies on a wire rack.
- For frosting, cream together the softened cream cheese and butter until smooth, then gradually add powdered sugar and mix in vanilla and milk until desired consistency.
- Frost fully cooled cookies and decorate if desired.
Notes
Store in an airtight container for up to 3 days. For longer storage, freeze unfrosted cookies.
