Ingredients
Cooked chicken, shredded or diced
Chicken broth
Cream of chicken soup
Cream of mushroom soup
Spaghetti, cooked al dente
Canned diced tomatoes with green chilies
Onion, diced
Celery, diced
Bell pepper, diced
Garlic, minced
Shredded cheddar cheese
Velveeta (optional)
Milk or half-and-half
Butter
Olive oil
Salt and black pepper
Garlic powder
Onion powder
Smoked paprika
Dried thyme
Cayenne pepper (optional)
Instructions
1. Sauté onion, celery, and bell pepper in butter and olive oil until softened, then add garlic and cook briefly.
2. In a bowl, whisk together cream of chicken soup, cream of mushroom soup, and chicken broth. Stir in milk or half-and-half, Velveeta if using, diced tomatoes with green chilies, and seasonings until smooth.
3. Add shredded chicken and cooked spaghetti to the creamy mixture, tossing to coat evenly.
4. Transfer mixture to a greased 9×13 inch baking dish and spread evenly.
5. Top generously with shredded cheddar cheese.
6. Bake at 375°F (190°C) for 25–30 minutes, until cheese is golden and bubbly.
7. Let rest 5–10 minutes before serving.
Notes
Use rotisserie or leftover chicken for convenience.
Cook spaghetti al dente to avoid overcooking in the oven.
Don’t skip sautéing aromatics for depth of flavor.
Experiment with cheeses like Monterey Jack or Colby-Jack.
