A creamy, dreamy Spicy Butternut Squash Sweet Potato Soup with coconut milk, warming spices, and a touch of heat — the perfect cozy autumn comfort food.
Ingredients
1 medium butternut squash, peeled, deseeded, and cubed
2 medium sweet potatoes, peeled and cubed
1 large yellow onion, chopped
3 cloves garlic, minced
1–2 jalapeños or serrano peppers, deseeded and minced
1-inch piece fresh ginger, grated
4 cups vegetable broth (or chicken broth)
1 can (13.5 oz) full-fat coconut milk
2 tablespoons olive oil
1 teaspoon ground cumin
½ teaspoon ground coriander
½ teaspoon turmeric powder
¼ teaspoon cayenne pepper (optional)
Salt and freshly ground black pepper to taste
Fresh cilantro, chopped (optional garnish)
Toasted pumpkin seeds (optional garnish)
Swirl of coconut cream (optional garnish)
Crumbled feta or goat cheese (optional garnish)
Instructions
1. Heat olive oil in a large pot over medium heat. Add chopped onion and cook until translucent, 5-7 minutes.
2. Add garlic, ginger, and jalapeños/serranos. Cook 1-2 minutes until fragrant.
3. Stir in cumin, coriander, turmeric, and cayenne pepper. Cook 30 seconds.
4. Add cubed butternut squash and sweet potatoes, stirring to coat with spices.
5. Pour in vegetable broth, bring to a boil, then reduce to a simmer. Cover and cook 15-20 minutes, until vegetables are tender.
6. Blend the soup until smooth, either in batches or with an immersion blender.
7. Return soup to pot and stir in coconut milk. Heat gently, without boiling.
8. Season with salt and freshly ground black pepper to taste.
9. Serve hot with garnishes of choice (cilantro, pumpkin seeds, coconut cream, cheese).
Notes
Add smoked paprika for a smoky flavor.
Finish with a squeeze of lime juice for brightness.
Stir in cooked lentils or chickpeas for added protein.
Roast additional vegetables like carrots, bell peppers, or parsnips for extra flavor.
