- 1½ cup potato starch
- ½ cup warm water
- 2 tablespoons regular soy sauce
- 2 tablespoons Chinese black vinegar
- 2 tablespoons gochugaru (coarse or fine ground)
- 1¼ teaspoons granulated sugar
- ⅛ teaspoon salt
- 2 tablespoons garlic (minced)
- 1 stalk green onion (sliced)
- 3 tablespoons neutral oil (such as avocado, sunflower, grapeseed)
- ⅓ cup cilantro (roughly chopped)
Instructions
- Cook the Potatoes: Begin by bringing a pot of water to a boil. Add the peeled and cut russet potatoes to the boiling water. Cook for about 10-15 minutes until fork-tender. Drain the water.
- Mash the Potatoes: While still hot, add ½ teaspoon of salt and mash until smooth.
- Make the Dough: Add 1½ cups of potato starch to the mashed potatoes. Mix well and knead into a dough, adding ½ cup of warm water if needed.
- Roll the Dough: Roll out the dough into ½ inch thick noodles and cut into strips.
- Cook the Noodles: Boil a large pot of water and add the noodles. Cook until floating, then transfer to a bowl of ice water.
- Make the Chili Oil: Combine soy sauce, Chinese black vinegar, gochugaru, sugar, and ⅛ teaspoon salt in a bowl. Heat 3 tablespoons oil until smoking, then pour over the sauce. Stir well.
- Combine Everything: Drain the noodles and toss with the chili oil mixture, minced garlic, sliced green onion, and cilantro. Serve warm.
Notes
Consider making extra chili oil if you love spice. Fresh ingredients greatly enhance the flavors.
