- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup crushed hard candy (various colors)
Instructions
- Preheat your oven to 375°F (190°C).
- In a mixing bowl, blend the flour, baking powder, and salt until well combined.
- In another large bowl, cream the softened butter and granulated sugar together until light and fluffy.
- Add the egg and vanilla extract to the butter mixture, mixing until fully integrated.
- Gradually incorporate the dry flour mixture into the wet mixture, stirring until a cohesive dough forms.
- On a floured surface, roll out the dough to approximately 1/4 inch thickness.
- Use your favorite cookie cutters to cut out shapes from the dough.
- With a smaller cutter or a knife, remove the center of each cookie to create a window for your candy.
- Fill the holes generously with the crushed hard candy.
- Arrange cookies on a baking sheet lined with parchment paper, then bake for 8-10 minutes, or until the edges turn lightly golden.
- Let the cookies cool completely on the baking sheet before transferring them to a wire rack.
Notes
Package them in decorative boxes as holiday gifts. Chill the dough if it becomes too soft.
