- 1 lb sirloin steak
- 1 cup queso cheese (Monterey Jack or cheddar)
- 1 cup long-grain white rice
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 tsp paprika
- 1 tsp cumin
- 1 tsp chili powder
- 1 bell pepper, diced (any color)
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Prepare your ingredients by dicing the onion and bell pepper, and minicing the garlic.
- In a large skillet, heat the olive oil over medium-high heat, add the sirloin steak, and sear for 4-5 minutes on each side until browned. Remove and let rest.
- In the same skillet, sauté the diced onion and bell pepper for 3-4 minutes until soft.
- Stir in the cooked long-grain white rice, season with spices, salt, and pepper, and heat through.
- Gradually add queso cheese, stirring until melty and creamy.
- Slice the rested steak, mix it into the cheesy rice mixture, and serve hot.
Notes
Garnish with fresh cilantro, sour cream, or avocado slices if desired. For a taco twist, use as a filling in tortillas.
