Ingredients

  • 1 lb chicken breast or thighs, cut into bite-sized pieces
  • 8 oz ramen or lo mein noodles
  • 4 cloves garlic, minced
  • 3 tablespoons soy sauce
  • 2 tablespoons hoisin sauce
  • 2 tablespoons honey
  • 1 teaspoon sesame oil
  • 1 tablespoon cornstarch
  • 1/2 teaspoon chili flakes or 1 teaspoon sriracha (optional)
  • 2 stalks green onions, chopped
  • 1 tablespoon sesame seeds
  • 1 tablespoon vegetable oil (for cooking)
  • Salt and pepper to taste

Instructions

  1. Cut the chicken into small, bite-sized pieces and toss with cornstarch, salt, and pepper.
  2. Heat vegetable oil in a large pan and sear the chicken until golden brown (5-7 minutes), then remove and set aside.
  3. Add sesame oil to the pan, then sauté minced garlic for 30 seconds.
  4. Stir in soy sauce, hoisin sauce, honey, and chili flakes or sriracha, and let simmer for 2-3 minutes.
  5. Cook the noodles according to package instructions, then drain and rinse.
  6. Return the chicken to the pan, add the noodles, and toss everything together until evenly coated in the sauce.
  7. Cook for an additional 2 minutes to heat through.
  8. Garnish with chopped green onions and sesame seeds before serving.

Notes

Store leftovers in an airtight container in the refrigerator for up to three days. Add a splash of water or soy sauce when reheating to keep moist.
