- 1 lb boneless, skinless chicken thighs, cut into bite-sized pieces
- 12 oz penne pasta
- 1/4 cup sweet chili sauce
- 1/4 cup soy sauce
- 1/4 cup honey
- 4 cloves garlic, minced
- 1 tbsp fresh ginger, grated
- 2 tbsp vegetable oil
- Salt and pepper, to taste
- 1/4 cup green onions, sliced
- Sesame seeds (optional)
Instructions
- Boil the Pasta: Bring a large pot of salted water to a boil, cook the penne pasta according to package instructions until al dente, drain and set aside, reserving some pasta water.
- Sauté the Chicken: In a large skillet, heat vegetable oil over medium heat, season chicken with salt and pepper, and cook for 5 to 7 minutes until golden brown.
- Add Aromatics: Add minced garlic and grated ginger to the skillet and cook for 1 minute until fragrant.
- Make the Sauce: Whisk together sweet chili sauce, soy sauce, and honey in a bowl, pour over the chicken, and simmer for 2 to 3 minutes until thickened.
- Combine with Pasta: Add cooked penne pasta to the skillet, toss everything, and adjust with reserved pasta water if needed.
- Final Touch: Adjust seasoning, garnish with sliced green onions and sesame seeds, serve hot.
Notes
You can add vegetables like bell peppers or broccoli for extra nutrition.
