Ingredients

  • 8 ounces cream cheese, softened
  • 1 cup crushed graham crackers
  • 1/2 cup finely chopped freeze-dried strawberries
  • 1/4 cup powdered sugar
  • 1/2 teaspoon vanilla extract
  • 8 ounces white chocolate or white candy melts
  • 2 tablespoons crushed freeze-dried strawberries for garnish (optional)

Instructions

  1. In a medium mixing bowl, beat together softened cream cheese, powdered sugar, and vanilla extract until smooth and creamy.
  2. Stir in crushed graham crackers and finely chopped freeze-dried strawberries until fully combined.
  3. Cover the bowl with plastic wrap and refrigerate for 30 to 60 minutes to firm up.
  4. Roll the chilled mixture into 1-inch balls and place on a parchment-lined baking sheet.
  5. Freeze the rolled truffles for 15 to 20 minutes.
  6. Melt white chocolate or candy melts in a microwave-safe bowl in 30-second intervals, stirring until smooth.
  7. Dip each truffle in melted chocolate, ensuring full coating, and place back on parchment paper.
  8. If desired, sprinkle crushed freeze-dried strawberries over truffles while chocolate is still wet.
  9. Allow the truffles to set completely at room temperature or refrigerate to speed up the setting process.
