- 100 g light-tasting oil
- 100 g granulated sugar
- 100 g brown sugar
- 2 large eggs (room temperature)
- 330 g milk (room temperature)
- 250 g cream cheese (softened to room temperature)
- 115 g unsalted butter (softened to room temperature)
- 100 g powdered sugar
- 70 g strawberry jam
- 1 teaspoon vanilla extract
- 200 g strawberries (finely diced)
- 7 strawberries (halved for decoration)
Instructions
- Make the strawberry jam: Combine 500 g of strawberries, 50 g of sugar, and 1 tablespoon of water in a saucepan over medium heat. Cook until thickened (10-15 minutes), then cool.
- Preheat the oven to 175°C (350°F). Grease and flour two round cake pans. In a bowl, sift together 190 g flour, 75 g cocoa powder, baking powder, baking soda, and salt.
- In another bowl, mix 115 g melted butter, 100 g light oil, 100 g granulated sugar, and 100 g brown sugar. Add eggs one at a time, then milk, mixing well.
- Gradually add dry ingredients to wet, mixing until smooth. Pour into prepared pans and bake for 25-30 minutes or until a toothpick comes out clean.
- While the cake cools, make the frosting by beating together 250 g cream cheese and 115 g butter until smooth. Gradually add 100 g powdered sugar and vanilla, then fold in the strawberry jam and 200 g diced strawberries.
- Assemble the cake by layering it with frosting and strawberry jam between layers. Cover the entire cake with the remaining frosting and decorate with halved strawberries.
