Description

Delightful sugar cookie cups filled with creamy frosting and topped with colorful sprinkles, perfect for any occasion.


Ingredients

  • 3/4 cup salted butter (softened)
  • 3/4 cup granulated sugar
  • 1 large egg
  • 1 1/2 teaspoons vanilla extract
  • 1/2 teaspoon almond extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • Sprinkles for decoration
  • 2 ounces cream cheese (softened)
  • 3 cups powdered sugar
  • 1/4 cup butter (softened)
  • 2 tablespoons milk
  • 1/4 teaspoon vanilla extract
  • Optional: pink or red food coloring gel

Instructions

  1. Preheat your oven to 350°F (175°C). Grease two regular muffin pans with nonstick cooking spray.
  2. In a large bowl, beat the softened butter and granulated sugar until light and fluffy. Scrape the bowl’s sides with a rubber spatula for even mixing.
  3. Add the egg, vanilla extract, and almond extract, mixing until smooth.
  4. In another bowl, whisk together the all-purpose flour, baking powder, and baking soda.
  5. Gradually stir the flour mixture into the wet ingredients until just combined.
  6. Press about 2 tablespoons of cookie dough into the bottom of each muffin cup, pushing it up halfway along the sides.
  7. Bake for about 12 minutes, or until the cookie cups are lightly golden on the edges. Allow cooling for 15 minutes, then press the center to create a cup shape. Let cool completely.
  8. While cooling, beat the softened cream cheese and butter until smooth. Gradually add powdered sugar, vanilla extract, and milk, mixing until desired consistency is achieved. Optionally, mix in food coloring.
  9. Fill a piping bag fitted with a star tip and swirl the frosting into each cookie cup. Top with festive sprinkles. Enjoy!
