- 3/4 cup salted butter (softened)
- 3/4 cup granulated sugar
- 1 large egg
- 1 1/2 teaspoons vanilla extract
- 1/2 teaspoon almond extract
- 2 cups all-purpose flour
- 1 teaspoon baking powder

- Sprinkles for decoration
- 2 ounces cream cheese (softened)
- 3 cups powdered sugar
- 1/4 cup butter (softened)
- 2 tablespoons milk
- 1/4 teaspoon vanilla extract
- Optional: pink or red food coloring gel
Instructions
- Preheat your oven to 350°F (175°C) and grease two regular muffin pans with nonstick cooking spray.
- In a big bowl, mix the softened butter and granulated sugar using an electric mixer until light and fluffy.
- Beat in the egg along with the vanilla and almond extracts until smooth.
- In another bowl, whisk together the all-purpose flour, baking powder, and baking soda.
- Gradually add the flour mixture to the wet ingredients until a dough forms, being careful not to over-mix.
- Press 2 tablespoons of cookie dough into the bottom of each muffin cup, pushing it halfway up the sides.
- Bake for 12 minutes, or until lightly golden. Allow to cool for at least 15 minutes then create a cup shape with a round tablespoon.
- Beat the softened cream cheese and butter together until smooth, then add the powdered sugar, vanilla extract, and milk, mixing until desired consistency is reached.
- Load the frosting into a piping bag fitted with a star tip and swirl it into each cookie cup or spoon it in.
- Finish with festive sprinkles if desired.
Notes
Store in an airtight container for up to three days at room temperature or up to a week in the refrigerator. Frost just before serving for optimal freshness.
