Description

Delightful treats that combine cookies and cupcake form, filled with cream cheese frosting and customizable toppings.


Ingredients

  • 3/4 cup salted butter (softened)
  • 3/4 cup granulated sugar
  • 1 large egg
  • 1 1/2 teaspoons vanilla extract
  • 1/2 teaspoon almond extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • Sprinkles for decoration
  • 2 ounces cream cheese (softened)
  • 3 cups powdered sugar
  • 1/4 cup butter (softened)
  • 2 tablespoons milk
  • 1/4 teaspoon vanilla extract
  • Optional: pink or red food coloring gel

Instructions

  1. Preheat your oven to 350°F (175°C) and grease two regular muffin pans with nonstick cooking spray.
  2. In a big bowl, mix the softened butter and granulated sugar using an electric mixer until light and fluffy.
  3. Beat in the egg along with the vanilla and almond extracts until smooth.
  4. In another bowl, whisk together the all-purpose flour, baking powder, and baking soda.
  5. Gradually add the flour mixture to the wet ingredients until a dough forms, being careful not to over-mix.
  6. Press 2 tablespoons of cookie dough into the bottom of each muffin cup, pushing it halfway up the sides.
  7. Bake for 12 minutes, or until lightly golden. Allow to cool for at least 15 minutes then create a cup shape with a round tablespoon.
  8. Beat the softened cream cheese and butter together until smooth, then add the powdered sugar, vanilla extract, and milk, mixing until desired consistency is reached.
  9. Load the frosting into a piping bag fitted with a star tip and swirl it into each cookie cup or spoon it in.
  10. Finish with festive sprinkles if desired.

Notes

Store in an airtight container for up to three days at room temperature or up to a week in the refrigerator. Frost just before serving for optimal freshness.
