- 1/2 cup unsalted butter, at room temperature
- 1 cup granulated sugar
- 1 large egg, at room temperature
- 1 1/2 teaspoons vanilla extract
- 1/4 teaspoon almond extract
- 1 3/4 cups all-purpose flour
- 1/2 teaspoon salt
Instructions
- In a stand mixer fitted with the paddle attachment, combine the room-temperature butter and sugar. Beat together until just combined, about 45 seconds.
- Add the egg, vanilla, and almond extract, mixing well for about a minute until creamy.
- Scrape down the sides of the bowl and gradually add the flour and salt, mixing until no streaks of flour remain.
- Shape the dough into a flat oval disk, wrap in plastic wrap, and refrigerate for at least an hour.
- Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
- On a floured surface, roll out the chilled dough to about 1/4 inch thickness.
- Cut out desired shapes and transfer them to the prepared baking sheets. Sprinkle colored sugar if desired.
- Bake for 8 to 12 minutes until the edges turn just golden brown.
- Allow cookies to cool completely on a wire rack. Enjoy plain, or add frosting if desired.
Notes
