Description

Ingredients

  • 1/2 cup unsalted butter, at room temperature
  • 1 cup granulated sugar
  • 1 large egg, at room temperature
  • 1 1/2 teaspoons vanilla extract
  • 1/4 teaspoon almond extract
  • 1 3/4 cups all-purpose flour
  • 1/2 teaspoon salt

Instructions

  1. In a stand mixer fitted with the paddle attachment, combine the room-temperature butter and sugar. Beat together until just combined, about 45 seconds.
  2. Add the egg, vanilla, and almond extract, mixing well for about a minute until creamy.
  3. Scrape down the sides of the bowl and gradually add the flour and salt, mixing until no streaks of flour remain.
  4. Shape the dough into a flat oval disk, wrap in plastic wrap, and refrigerate for at least an hour.
  5. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  6. On a floured surface, roll out the chilled dough to about 1/4 inch thickness.
  7. Cut out desired shapes and transfer them to the prepared baking sheets. Sprinkle colored sugar if desired.
  8. Bake for 8 to 12 minutes until the edges turn just golden brown.
  9. Allow cookies to cool completely on a wire rack. Enjoy plain, or add frosting if desired.

Notes

Let the dough chill adequately to help the cookies retain their shape while baking. Avoid overbaking to keep cookies soft.
