- 1/2 cup Unsalted Butter (room temperature)
- 1 cup All-Purpose Flour
- 1/4 cup Powdered Sugar
- 1/2 cup Lemon Juice (2–3 lemons)
- 1 tbsp Lemon Zest (finely grated)
- 3 Large Eggs (room temperature)
- 1 1/2 cups Granulated Sugar
- 1/2 cup All-Purpose Flour (sifted)
- Powdered Sugar (for dusting)
Instructions
- Preheat your oven to 350°F (175°C). In a mixing bowl, cream together the unsalted butter and powdered sugar until smooth. Gradually mix in 1 cup of all-purpose flour until combined. Press this mixture into the bottom of a greased 9×9-inch baking dish. Bake for 15 minutes or until lightly golden.
- In another bowl, whisk together the eggs, granulated sugar, lemon juice, lemon zest, and sifted flour. Pour this lemon mixture over the baked crust. Return to the oven and bake for an additional 20-25 minutes, or until the filling is set. Let cool completely, then dust with powdered sugar before cutting into squares.
Notes
Ensure your butter is at room temperature for easier mixing. Use freshly squeezed lemon juice for the best flavor. Sift the flour to keep the texture light and fluffy. For extra zest, add more grated lemon peel to the filling.
