Refreshing, tangy, and sweet lemon bars that are simple to make and perfect for any occasion.


Ingredients

  • 1/2 cup Unsalted Butter (room temperature)
  • 1 cup All-Purpose Flour
  • 1/4 cup Powdered Sugar
  • 1/2 cup Lemon Juice (23 lemons)
  • 1 tbsp Lemon Zest (finely grated)
  • 3 Large Eggs (room temperature)
  • 1 1/2 cups Granulated Sugar
  • 1/2 cup All-Purpose Flour (sifted)
  • Powdered Sugar (for dusting)

Instructions

  1. Preheat your oven to 350°F (175°C). In a bowl, mix the room temperature butter, 1 cup of all-purpose flour, and 1/4 cup of powdered sugar until crumbly. Press this mixture into the bottom of a greased 8×8-inch baking dish. Bake for about 18 minutes or until lightly golden.
  2. Whisk together the eggs, granulated sugar, lemon juice, lemon zest, and sifted flour in a separate bowl. Pour the lemon mixture over the baked crust.
  3. Place the dish back in the oven and bake for an additional 20-25 minutes. Check for doneness; the filling should be set but still have a slight jiggle in the center.
  4. Once baked, let them cool to room temperature. Dust the top with powdered sugar before cutting them into squares.

Notes

Use fresh lemons for the best flavor. Sift the flour for a lighter texture in the lemon curd. Use room temperature butter for easy mixing.
