Description

A healthy and filling sweet potato breakfast bowl packed with eggs and veggies, perfect for meal prep.


Ingredients

  • 1 large sweet potato (~500 g), chopped into 1/2 inch pieces
  • 2 cups mushrooms, diced
  • 1 red bell pepper, diced
  • 1 cup spinach, chopped
  • 8 eggs
  • 1 cup cottage cheese, 2%
  • 2 tsp Everything Bagel Seasoning (optional)
  • 3/4 cup shredded cheese

Instructions

  1. Preheat your oven to 350°F. Grease four oven-safe meal prep containers and place them on a sheet pan.
  2. Put the chopped sweet potatoes in a single layer in each meal prep container.
  3. Divide the diced mushrooms, bell peppers, and chopped spinach evenly among the containers.
  4. For the eggs, whisk together 8 eggs and 1 cup of cottage cheese, then evenly divide this mixture among the containers.
  5. Sprinkle ½ tsp of Everything Bagel seasoning into each container, if using.
  6. Top each container with an even amount of shredded cheese.
  7. Bake for 35-40 minutes or until the eggs are set and the sweet potatoes are fully cooked.

Notes

Customize the vegetables based on your preference. Make sure to chop sweet potatoes into uniform pieces for even cooking.
