  • 2 cups water or chicken broth
  • 1 lb ground beef or turkey (or a plant-based alternative)
  • 1 packet taco seasoning
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1 cup diced tomatoes (fresh or canned)
  • 1 cup shredded lettuce
  • 1 cup shredded cheddar cheese
  • ½ cup salsa
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • Optional for garnish: fresh cilantro and lime wedges

Instructions

  1. In a medium saucepan, bring the 2 cups of water or chicken broth to a boil. Stir in the uncooked rice, reduce the heat to low, cover, and let it simmer for about 18 minutes, or until the rice is tender.
  2. In a large skillet, heat the olive oil over medium heat. Add the ground beef or turkey and cook until browned; make sure to drain any excess fat.
  3. Stir in the taco seasoning, mixing it thoroughly with the meat. For a saucier mixture, you can add a splash of water.
  4. Fold in the black beans, corn, and diced tomatoes into the skillet. Stir everything together until heated through, which should take about 5 minutes.
  5. In serving bowls, layer the cooked rice first. Then add the taco meat mixture on top, followed by shredded lettuce, cheddar cheese, and salsa.
  6. For the finishing touch, garnish with fresh cilantro and lime wedges to enhance that zesty flavor.

Notes

Cooking your rice in chicken broth can elevate the flavor. Always drain the excess fat from the meat to keep the dish from being greasy.
