Instructions
- In a large pot, heat olive oil over medium heat. Add onions and garlic, and sauté until translucent.

- Add orzo and thyme, stirring to combine.
- Pour in vegetable broth, bring to a boil, then reduce heat to low. Cover and simmer for about 10-12 minutes or until orzo is tender.
- Season with salt and pepper.
- Serve hot, garnished with Parmesan cheese and fresh parsley.
Notes
Make sure not to overcook the orzo; check it a minute or two before the suggested cooking time. For added flavor, sauté the mushrooms with a little soy sauce or balsamic vinegar. For a creamier dish, add a splash of cream or a dollop of sour cream before serving.
