- 8 ounces mushrooms, sliced

- Parmesan cheese, for serving (optional)
- Fresh parsley, chopped (for garnish)
Instructions
- In a large pot, heat olive oil over medium heat. Add onions and garlic, sauté until onions are translucent.
- Add sliced mushrooms and cook until they soften.
- Stir in the orzo and dried thyme, cooking for 1-2 minutes.
- Pour in the vegetable broth and bring to a boil.
- Reduce heat to low, cover, and simmer for about 10-12 minutes or until orzo is tender and liquid is absorbed.
- Season with salt and pepper to taste.
- Serve warm, topped with Parmesan cheese and fresh parsley.
Notes
For extra flavor, add a splash of lemon juice or a pinch of red pepper flakes. Consider adding other vegetables like spinach or bell peppers for variety.
