Ingredients

1.5 lbs boneless, skinless chicken breasts or thighs, cubed

1 tbsp olive oil

1 tsp garlic powder

1 tsp onion powder

1 tsp paprika

Salt and black pepper to taste

3 tbsp unsalted butter

2 cloves garlic, minced

1 tbsp all-purpose flour (optional, for thickening)

1 cup chicken broth

1 cup heavy cream

1 tsp dried parsley

Optional garnish: fresh chives or parsley


Instructions

1. Pat chicken cubes dry. Toss with olive oil, salt, pepper, garlic powder, onion powder, and paprika.

2. Heat skillet over medium-high. Sear chicken in a single layer until golden and cooked through, 5-7 minutes. Remove and set aside.

3. Reduce heat to medium. Melt butter in skillet. Whisk in flour (if using) and cook 1 minute. Add minced garlic and sauté 30 seconds.

4. Slowly whisk in chicken broth and heavy cream. Simmer 3-5 minutes until slightly thickened. Stir in dried parsley.

5. Return chicken to skillet. Simmer 2-3 minutes, coating chicken in sauce.

6. Garnish with fresh herbs and serve hot.

Notes

Add thyme or smoked paprika for extra flavor.

A pinch of cayenne adds gentle heat.

Mix in sautéed mushrooms or spinach for veggies.

Serve with rice, polenta, or pasta.

If no heavy cream, substitute with milk + cream cheese (texture will vary).
