Description

A hearty and delicious Texas Tamale Pie with seasoned ground beef, black beans, and a zesty cornmeal topping.


Ingredients

  • 1 pound ground beef
  • 1 medium onion, chopped
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 can (15 ounces) diced tomatoes with green chilies
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup cornmeal
  • 1 cup milk
  • 1 large egg
  • 1 cup shredded cheddar cheese
  • 1/2 cup sliced black olives (optional)
  • 1/4 cup chopped fresh cilantro for garnish

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet over medium heat, cook the ground beef and chopped onion until the beef is browned and the onion is soft, about 5-7 minutes. Drain excess fat.
  3. Stir in black beans, diced tomatoes, chili powder, cumin, garlic powder, salt, and black pepper. Simmer for about 5 minutes.
  4. In a separate bowl, mix cornmeal, milk, and egg until smooth.
  5. Grease a 9×13-inch baking dish, and pour half of the cornmeal mixture into the dish.
  6. Layer the beef mixture over the cornmeal base.
  7. Pour the remaining cornmeal mixture on top of the beef layer.
  8. Sprinkle shredded cheddar cheese over the top and add sliced olives if desired.
  9. Bake for 30-35 minutes until golden brown and set.
  10. Let cool for 10 minutes before slicing and garnish with chopped cilantro before serving.

Notes

Serve with optional toppings like sliced olives, shredded lettuce, or avocado.
