Soft and golden sugar cookies perfect for any occasion, enhanced with a hint of almond extract.

- 1/2 cup unsalted butter, at room temperature
- 1 cup granulated sugar
- 1 large egg, at room temperature
- 1 1/2 teaspoons vanilla extract
- 1/4 teaspoon almond extract
- 1 3/4 cups all-purpose flour
- 1/2 teaspoon salt
Instructions
- In a stand mixer fitted with the paddle attachment, combine the room-temperature butter and sugar. Beat until just combined, about 45 seconds.
- Add in the egg, vanilla, and almond extract, then beat well for about 1 minute until creamy.
- Scrape down the sides of the bowl. Gradually add the flour and salt, mixing until no streaks of flour remain.
- Form the dough into a flat, oval disk. Wrap it in plastic wrap and refrigerate for at least 60 minutes or overnight.
- Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
- On a floured surface, roll out the chilled dough to about 1/4 inch thickness.
- Cut out your desired shapes and transfer them carefully to the prepared baking sheets. If you want to sprinkle colored sugar, do it now!
- Bake for 8 to 12 minutes, until the edges are just golden brown.
- Allow the cookies to cool completely on a wire rack. Optionally, frost them or enjoy them plain.
Notes
Store cookies in an airtight container at room temperature for up to a week, or freeze for up to three months.
