Ingredients

- 1 cup mascarpone cheese (room temperature)
- 1/2 cup powdered sugar
- 1/2 teaspoon vanilla extract
- 1 tablespoon espresso or strong coffee (cooled)
- 1/2 teaspoon cocoa powder (plus extra for dusting)
- 1/2 cup ladyfinger crumbs (or graham crackers)
- 8 oz semi-sweet or dark chocolate (for coating)
- 2 oz white chocolate (optional drizzle)
- Mini chocolate chips (optional garnish)
Instructions
- Combine the mascarpone cheese, powdered sugar, vanilla extract, espresso, and cocoa powder until smooth and creamy.
- Gently stir in the ladyfinger crumbs until thick.
- Chill the mixture in the refrigerator for about 1 hour.
- Roll the chilled mixture into 1-inch balls and place on a parchment-lined tray.
- Freeze the truffles for 15-20 minutes.
- Melt the chocolate and coat each truffle, tapping off excess chocolate.
- Drizzle with white chocolate and sprinkle mini chocolate chips, if desired.
- Dust with cocoa powder before the chocolate sets.
- Chill in the fridge for about 30 minutes until firm.

Store in an airtight container in the fridge for up to 1 week, or freeze for up to 2 months.
