  • ½ cup (113 g) unsalted butter, softened
  • ½ cup (100 g) granulated sugar
  • ½ cup (100 g) brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup (125 g) all-purpose flour
  • ½ cup (45 g) unsweetened cocoa powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ½ teaspoon espresso powder (optional)
  • Cookie Dough (Pink):
  • ½ cup (113 g) unsalted butter, softened
  • ½ cup (100 g) granulated sugar
  • ½ cup (100 g) brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1½ cups (190 g) all-purpose flour
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 23 teaspoons freeze-dried raspberry powder or pink food coloring
  • Ganache Filling:
  • ½ cup (120 ml) heavy cream
  • ¾ cup (130 g) dark or white chocolate chips, finely chopped
  • 1 tablespoon (14 g) butter (optional)
  • Toppings (Optional):
  • Freeze-dried raspberries
  • Chocolate squares
  • Heart sprinkles
  • Melted white chocolate for drizzling

Instructions

  1. Prepare each dough flavor separately: Cream together the butter, granulated sugar, and brown sugar for chocolate dough. Mix in the egg and vanilla extract, then gradually stir in dry ingredients.
  2. Repeat for the pink cookie dough using raspberry powder or pink food coloring.
  3. Chill both dough flavors for 30 minutes in the refrigerator.
  4. Preheat oven to 350°F (180°C). Scoop dough into balls and make a small well in the center.
  5. Bake cookies for 10 to 12 minutes; they should be soft in the center.
  6. Cool cookies completely on a wire rack.
  7. Make ganache by heating heavy cream and pouring it over chopped chocolate. Stir until smooth.
  8. Fill cookie wells with ganache.
  9. Decorate with optional toppings as desired.
  10. Let set before serving.

Notes

For the best flavor, use high-quality chocolate for the ganache.
