Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, cream together the softened butter and sugar until light and fluffy.
  3. Beat in the egg along with the vanilla extract.
  4. In a separate bowl, whisk together the flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  6. Split the dough into three portions.
  7. For pistachio-lemon cookies, fold in the chopped pistachios. For chocolate cookies, incorporate the cocoa powder. For peanut cookies, mix in the peanut butter and a swirl of strawberry jam.
  8. Roll the dough into balls and place on a parchment-lined baking sheet.
