Description
A fun, cheesy Walking Taco Casserole layered with corn chips, seasoned ground beef, beans, corn, creamy cheese filling, and your favorite taco toppings. Perfect for family dinners or gatherings.
Ingredients
1 lb ground beef (or ground turkey/chicken)
1 packet taco seasoning
1 (10 oz) bag corn chips (Fritos or similar)
1 (15 oz) can black beans, rinsed and drained
1 (15 oz) can corn, drained
1 (10 oz) can diced tomatoes with green chilies (Rotel), undrained
2 cups shredded cheese (Cheddar, Monterey Jack, or taco blend)
1 (8 oz) block cream cheese, softened
1/2 cup sour cream
Optional toppings: shredded lettuce, diced tomatoes, salsa, guacamole, jalapeños
Instructions
1. Brown ground beef in skillet, drain grease, and stir in taco seasoning.
2. In a bowl, combine softened cream cheese and sour cream until smooth.
3. Preheat oven to 375°F (190°C). Grease a 9×13 inch baking dish.
4. Spread half of corn chips in bottom of dish. Layer with beef, dollops of cream mixture, beans, corn, diced tomatoes, and half the cheese.
5. Repeat layers with remaining chips, beef, cream mixture, and cheese.
6. Bake 20–25 minutes until bubbly and golden.
7. Let rest 5 minutes before serving. Add toppings as desired.
Notes
Layer some chips on top during last 10 minutes of baking to keep them crunchy.
Assemble casserole in advance without chips; add them before baking.
Add cayenne or hot sauce for extra spice.
Make vegetarian by replacing beef with beans or plant-based crumbles.
Swap ground beef for shredded chicken for variation.
Use nacho cheese-flavored corn chips for a fun twist.
Store leftovers in fridge 3–4 days; best enjoyed fresh.
