Ingredients

- 2 cups watermelon, cubed
- 1 cup cucumber, diced
- 1 cup strawberries, sliced
- 1/4 cup red onion, thinly sliced
- 1/4 cup fresh mint leaves, chopped
- 2 tablespoons olive oil
- 1 tablespoon lime juice
- Salt and pepper to taste
Instructions
- Cut the watermelon, cucumber, and strawberries into bite-size pieces.
- Thinly slice the red onion and chop the mint.
- Put the fruit and onion in a large bowl.
- Whisk the olive oil, lime juice, salt, and pepper in a small bowl.
- Pour the dressing over the salad and toss gently.
- Sprinkle the chopped mint on top. Serve right away.
Notes
Cut the fruit into similar-sized pieces for even bites. Chill the fruit before mixing for a cooler salad.
