Ingredients

  • 2 cups watermelon, cubed
  • 1 cup cucumber, diced
  • 1 cup strawberries, sliced
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup fresh mint leaves, chopped
  • 2 tablespoons olive oil
  • 1 tablespoon lime juice
  • Salt and pepper to taste

Instructions

  1. Cut the watermelon, cucumber, and strawberries into bite-size pieces.
  2. Thinly slice the red onion and chop the mint.
  3. Put the fruit and onion in a large bowl.
  4. Whisk the olive oil, lime juice, salt, and pepper in a small bowl.
  5. Pour the dressing over the salad and toss gently.
  6. Sprinkle the chopped mint on top. Serve right away.

Notes

Cut the fruit into similar-sized pieces for even bites. Chill the fruit before mixing for a cooler salad.
