Description

A delicious and comforting White Chicken Chili, packed with tender chicken, creamy beans, and a hint of spice, perfect for busy weeknight dinners or cozy weekends.


Ingredients

  • 2 cups cooked chicken, shredded
  • 1 can white beans, rinsed and drained
  • 1 can corn, drained
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 4 cups chicken broth
  • 1 cup heavy cream or sour cream
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Heat a large pot over medium heat and add some oil. Sauté the diced onion and minced garlic until the onion is translucent, about 3-5 minutes.
  2. Add shredded chicken, rinsed white beans, drained corn, ground cumin, chili powder, and chicken broth to the pot, and stir to combine.
  3. Bring the mixture to a boil, then reduce heat and let it simmer for about 15 minutes.
  4. Stir in the heavy cream or sour cream.
  5. Season with salt and pepper to taste.
  6. Ladle into bowls and garnish each serving with fresh cilantro.

Notes

For quicker preparation, use rotisserie chicken. Adjust spices to your taste, and you can mash some white beans for a thicker consistency.
