Why Make This Recipe

Croissants are a delicious and buttery treat, perfect for breakfast or a snack. Making your own croissants at home may seem difficult, but it is a rewarding experience. The flaky layers of a homemade croissant will impress your family and friends. Plus, you can enjoy them fresh out of the oven!

How to Make Croissant

Ingredients:

  • 18 oz all-purpose flour (or just over 4 cups)
  • ¼ cup + 1 Tbsp granulated sugar
  • 2½ tsp fine sea salt or table salt
  • 1 Tbsp + 1/2 tsp instant yeast
  • ½ cup + 2 Tbsp cold water
  • ½ cup + 2 Tbsp cold whole milk
  • 3 Tbsp unsalted butter, softened (use European-style butter)
  • 1¼ cups cold, unsalted butter (use European-style butter only)
  • 1 large egg
  • 1 egg yolk
  • Pinch of salt

Directions:

How to Make Croissant Dough:

  1. In a large bowl, combine the flour, sugar, salt, and instant yeast.
  2. Add cold water and cold milk to the dry ingredients. Mix until it forms a dough.
  3. Knead the dough for about 5 minutes until it is smooth. Then, let it rest for about 30 minutes.

How to Laminate the Dough:

  1. Roll the dough into a rectangle on a floured surface.
  2. Place the cold, unsalted butter in the center of the dough rectangle.
  3. Fold the dough over the butter, sealing the edges. Roll it out again to create a larger rectangle.
  4. Fold the rectangle into thirds, like a letter, and chill it for 30 minutes. Repeat this process two more times.

How to Form Croissants:

  1. Roll the laminated dough into a large rectangle again.
  2. Cut the dough into triangles.
  3. Starting from the base of each triangle, roll the dough towards the tip to form a croissant shape.
  4. Place the croissants on a baking sheet lined with parchment paper and allow them to rise for about 1-2 hours.

How to Bake Croissants:

  1. Preheat your oven to 375°F (190°C).
  2. Brush the croissants with a mixture of the egg and egg yolk.
  3. Bake for 20-25 minutes or until golden brown. Enjoy the smell as they bake!

How to Serve Croissant

Serve croissants warm, straight from the oven, with a bit of butter or your favorite jam. They are also great as sandwich bread. Pair them with coffee or tea for a delightful breakfast.

How to Store Croissant

If you have any leftover croissants, store them in an airtight container at room temperature for up to 2 days. For longer storage, freeze them in a freezer-safe bag. Simply reheat them in the oven to restore their flakiness.

Tips to Make Croissant

  • Use high-quality butter for the best flavor and texture.
  • Ensure your ingredients are cold to achieve optimal lamination.
  • Don’t rush the resting times; they are important for the dough to relax.

Variation

You can add chocolate to the center of the croissants before rolling them up for delicious chocolate croissants. You can also try adding almond paste for a nutty twist!

FAQs

1. Can I make croissants without a stand mixer?
Yes, you can make them by hand. Just knead the dough well and follow the same steps.

2. How can I tell if my croissant dough has risen enough?
The dough should double in size and feel soft and puffy.

3. Is it necessary to use European-style butter?
While not mandatory, European-style butter has a higher fat content, which can improve the texture and flavor of the croissants.
