How to Make Buttery Cheese Garlic Rolls

Ingredients

  • 1 garlic head
  • Sprinkle of salt
  • 30 grams olive oil
  • 50 grams butter
  • 1 tablespoon fresh parsley
  • 90 grams warm milk
  • 7 grams active dry yeast
  • 25 grams honey
  • 200 grams all-purpose flour
  • 50 grams bread flour
  • 20 grams milk powder (optional)
  • 25 grams butter
  • 2 egg yolks
  • 1 1/2 teaspoon salt
  • 1 tablespoon sugar
  • 200 grams mozzarella cheese
  • Garlic butter we made previously
  • 1 egg

Directions

  1. Roast Garlic: Start by taking a whole garlic head and cutting off the top. Place it in a ramekin, drizzle with olive oil, sprinkle with salt, cover with aluminum foil, and roast at 160°C (320°F) for 2 hours until it becomes buttery soft.

  2. Make Garlic Butter: Once the garlic is ready, mix the roasted garlic with softened butter, chopped parsley, and 2 tablespoons of the garlic oil. Set this mixture aside.

  3. Prepare Yeast Mixture: In a bowl, combine warm milk, active dry yeast, and honey. Let it sit for about 10 minutes until it becomes frothy.

  4. Make Dough: In a mixing bowl, combine all-purpose flour, bread flour, sugar, milk powder, softened butter, salt, two egg yolks, and the yeast mixture.

  5. Knead Dough: Using a dough hook attachment, knead the dough on medium speed for 15-20 minutes until it is soft and smooth.

  6. Proof Dough: Place the dough in a covered bowl and let it proof in a warm place (around 29°C or 85°F) for about 1 hour and 30 minutes, or until it doubles in size.

  7. Roll Out Dough: Roll out the dough to about 1/4 cm (or 1/8 inch) thickness. Spread the prepared garlic butter evenly over the surface.

  8. Add Mozzarella: Sprinkle mozzarella cheese on top of the garlic butter, then tightly roll the dough into a log.

  9. Cut Dough: Use a knife or dental floss to cut the dough into 6 equal portions.

  10. Second Proof: Place the rolls on a baking sheet, cover them, and let them proof for another 30 minutes until they become puffy.

  11. Bake: Preheat your oven to 175°C (350°F). Brush the rolls with egg wash and bake for 20-25 minutes, checking after 20 minutes to ensure they don’t overbake.

  12. Decorate: After baking, brush the rolls with leftover garlic butter and sprinkle with chopped parsley before serving.

How to Serve Buttery Cheese Garlic Rolls

These rolls are best served warm. They make a delightful side for pasta dishes, soups, or salads. You can also enjoy them alone with a bit of extra garlic butter for dipping.

How to Store Buttery Cheese Garlic Rolls

To store these rolls, let them cool completely, then place them in an airtight container. They can be kept at room temperature for up to 3 days. For longer storage, you can freeze them. Just thaw and reheat in the oven before serving.

Tips to Make Buttery Cheese Garlic Rolls

  • Make sure your yeast is fresh for the best rise.
  • Allow the rolls to cool slightly before serving to avoid burning your mouth.
  • Feel free to add herbs or spices to the garlic butter for extra flavor.

Variation

You can customize the cheese by using cheddar, gouda, or a mix of your favorite cheeses instead of mozzarella. You can also add cooked bacon or sun-dried tomatoes for an added twist.

FAQs

1. Can I use store-bought garlic powder instead of roasting garlic?
Yes, you can use garlic powder if you are short on time, but roasted garlic gives a richer flavor.

2. What if I don’t have active dry yeast?
You can use instant yeast instead, following the same process without needing to proof it first.

3. Can I make the dough in advance?
Absolutely! You can prepare the dough and let it rise, then store it in the fridge for up to 24 hours before shaping and baking.
