- 8 oz Short Pasta (rotini or penne)
- 1 cup Cherry Tomatoes (halved)
- 1 cup Cucumber (diced)
- 1/2 cup Red Onion (diced)
- 1 cup Bell Pepper (diced)
- 1/2 cup Black Olives (sliced)
- 1/2 cup Italian Dressing
- 1 tsp Garlic Powder
Instructions
- Boil a large pot of salted water and add the pasta. Cook according to the package instructions until al dente.
- Drain the pasta and rinse it under cold water to stop the cooking process.
- In a large bowl, combine the cooled pasta with cherry tomatoes, cucumber, red onion, bell pepper, and black olives.
- Pour the Italian dressing over the salad and sprinkle with garlic powder.
- Toss everything until well combined, ensuring each ingredient is coated in the dressing.
- Taste and adjust the seasoning if needed.
- Chill the salad for at least 30 minutes before serving to let the flavors meld.
Notes
For extra crunch, feel free to add more vegetables like carrots or zucchini. For added protein, toss in some chickpeas or grilled chicken.
