Description
A simple side dish of sweet, warm roasted carrots with a honey glaze, perfect for weeknight meals or holiday tables.

- 1 pound Fresh Carrots (Cut into uniform pieces)
- 3 tablespoons Honey (Can substitute with maple syrup)
- 2 tablespoons Butter (Can substitute with coconut oil for vegan version)
- 1 teaspoon Salt (Adjust to taste)
- 1/2 teaspoon Pepper (Freshly ground preferred)
- 2 tablespoons Parsley (Optional, for garnish)
- 1/4 cup Brown Sugar (Can replace with sugar alternative)
- 1 teaspoon Garlic Powder (Fresh minced garlic can be substituted)
Instructions
- Preheat oven to 400°F (200°C).
- Peel and cut carrots into uniform pieces so they cook evenly.
- Mix honey, melted butter, brown sugar, salt, pepper, and garlic powder in a bowl.
- Toss carrots in the glaze until well coated.
- Place carrots in a single layer in a baking dish or sheet.
- Bake for 20–30 minutes, stirring once, until carrots are fork-tender and edges are lightly browned.
- If glaze needs to thicken, bake for 2–3 more minutes and watch closely.
- Remove from oven and sprinkle with chopped parsley if using.
- Serve warm.
Notes
Cut carrots the same size for even cooking. For a richer glaze, brush extra honey-butter on in the last 5 minutes.
