Ingredients
- Chicken breast or thighs
- Skewers
- Coconut milk
- Soy sauce
- Brown sugar
- Lime juice
- Garlic
- Ginger
- Curry powder
- Peanut butter
- Cilantro
- Vegetables (like bell peppers, zucchini)
- Rice (for serving)
Instructions
- Soak the skewers in water for at least 30 minutes.
- Mix coconut milk, soy sauce, brown sugar, lime juice, minced garlic, ginger, and curry powder in a bowl.
- Marinate the chicken in the mixture for at least 1 hour.
- Preheat the grill or oven.
- Thread the marinated chicken onto the skewers.
- Grill or bake until fully cooked, about 10-15 minutes.
- Mix peanut butter with soy sauce, lime juice, and a little water until smooth for the peanut sauce.
- Serve the satay with peanut sauce and sides of rice and grilled vegetables.
Notes
For the best flavor, let the chicken marinate longer if possible. Adjust the thickness of the peanut sauce by adding more or less water.
