  • 1/4 cup maple syrup (optional)
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract

  • 1/4 teaspoon salt
  • 1/2 cup chocolate chips or blueberries (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. Mash the ripe bananas in a mixing bowl until smooth with a few small lumps.
  3. Add rolled oats, milk, maple syrup (if using), baking powder, vanilla extract, cinnamon, and salt to the mashed bananas; stir gently until combined.
  4. Fold in chocolate chips or blueberries if desired.
  5. Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.
  6. Bake for 18-20 minutes, checking with a toothpick for doneness.
  7. Cool slightly in the tin before transferring to a wire rack to cool completely.
