- 1 cup rolled oats
- 1/2 cup milk (or dairy-free alternative)
- 1/4 cup maple syrup (optional)
- 1 teaspoon baking powder
- 1 teaspoon vanilla extract

- 1/4 teaspoon salt
- 1/2 cup chocolate chips or blueberries (optional)
Instructions
- Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
- Mash the ripe bananas in a mixing bowl until smooth with a few small lumps.
- Add rolled oats, milk, maple syrup (if using), baking powder, vanilla extract, cinnamon, and salt to the mashed bananas; stir gently until combined.
- Fold in chocolate chips or blueberries if desired.
- Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.
- Bake for 18-20 minutes, checking with a toothpick for doneness.
- Cool slightly in the tin before transferring to a wire rack to cool completely.
