Ingredients

- 8 oz pasta (your choice)
- 2 cups broccoli florets
- 1 cup cherry tomatoes, halved
- 1/2 cup red onion, diced
- 1/2 cup bell pepper, diced
- 1/2 cup shredded cheese (optional)
- 1/4 cup olive oil
- 2 tablespoons vinegar (apple cider or red wine)
- 1 teaspoon garlic powder
- Salt and pepper to taste
Instructions
- Cook the pasta according to package instructions. Drain and rinse under cold water.
- In a large bowl, combine the cooked pasta, broccoli florets, cherry tomatoes, red onion, and bell pepper.
- In a small bowl, whisk together olive oil, vinegar, garlic powder, salt, and pepper.
- Pour the dressing over the salad and toss to coat.
- If desired, sprinkle shredded cheese on top before serving.
- Chill in the refrigerator for at least 30 minutes before serving.
Notes
Use whole-grain pasta for a healthier option. Allow the salad to chill longer for better flavor melding.
