Ingredients

  • 8 oz pasta (your choice)
  • 2 cups broccoli florets
  • 1 cup cherry tomatoes, halved
  • 1/2 cup red onion, diced
  • 1/2 cup bell pepper, diced
  • 1/2 cup shredded cheese (optional)
  • 1/4 cup olive oil
  • 2 tablespoons vinegar (apple cider or red wine)
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. Cook the pasta according to package instructions. Drain and rinse under cold water.
  2. In a large bowl, combine the cooked pasta, broccoli florets, cherry tomatoes, red onion, and bell pepper.
  3. In a small bowl, whisk together olive oil, vinegar, garlic powder, salt, and pepper.
  4. Pour the dressing over the salad and toss to coat.
  5. If desired, sprinkle shredded cheese on top before serving.
  6. Chill in the refrigerator for at least 30 minutes before serving.
