A quick and fresh cucumber pasta salad perfect for warm days and potlucks.
Ingredients

- 8 oz pasta (your choice)
- 1 cucumber, diced
- 1 cup cherry tomatoes, halved
- 1/4 red onion, diced
- 1/4 cup fresh parsley, chopped
- 1/2 cup feta cheese, crumbled
- 1/4 cup olive oil
- 2 tablespoons red wine vinegar
- Salt and pepper to taste
Instructions
- Cook the pasta according to package instructions, then drain and let it cool.
- Combine the cooled pasta, cucumber, cherry tomatoes, red onion, parsley, and feta cheese in a large bowl.
- Whisk together the olive oil, red wine vinegar, salt, and pepper in a separate bowl.
- Pour the dressing over the salad and toss to combine.
- Chill in the refrigerator for at least 30 minutes before serving.
Notes
Serve cold or at cool room temperature. Use a large bowl and toss just before serving.
