Instructions
- Choose your apples, ideally a mix of Granny Smith, Gala, and Golden Delicious.
- Make the filling by zesting lemon peel and adding lemon juice to a skillet.
- Prepare the apples by peeling and slicing them into 1/8 inch pieces, coating with lemon juice to prevent browning.
- Heat the filling by adding sugars, flour, salt, cinnamon, nutmeg, and cardamom to the skillet with the apples.
- Cook the mixture, stirring every 3 minutes until the apples are fork-tender, about 20 minutes.
- Remove from heat and stir in the vanilla.
- Cool the filling completely in a half-sheet pan.
- Prepare the pie crust by rolling out the dough and placing it in a pie dish.
- Fill the pie with the apple mixture using a rubber spatula.
- Top with the second sheet of crust, crimp the edges, and vent the pie.
- Chill the pie in the fridge or freezer for 20-30 minutes.
- Preheat the oven to 425°F with a baking sheet in the center rack.
- Brush the pie crust with milk or beaten egg before baking.
- Bake for 15 minutes, then cover the crust with foil and reduce oven temperature to 350°F.
- Continue baking for another 40-45 minutes, until golden brown and bubbling.
- Cool the pie on a wire rack for about 4 hours before serving.
- Serve at room temperature with optional ice cream or whipped cream.
