- 1 cup diced rhubarb
- 1/2 cup sugar
- 1 cup water
- 1/4 cup vegetable oil
- 3 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- Powdered sugar for dusting (optional)
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×13 inch baking pan.
- Combine the cake mix, sugar, water, vegetable oil, eggs, and vanilla extract in a large bowl. Mix well until smooth.
- Fold in the diced rhubarb.
- Pour the batter into the prepared pan and spread it out evenly.
- Sprinkle the top with baking powder (optional, for extra rise).
- Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
- Allow to cool before dusting with powdered sugar, if desired.
